PUMPKIN SPICE PIE WITH CRANBERRIES

INGREDIENT ITEMS

  • 1 slice GoLo bread, rolled thin & toasted
  • 1 packet Blissful Wellness Vanilla Protein Pudding Mix
  • 1/3 cup butternut squash; peeled, chopped and cooked
  • 2 packets Splenda
  • 2 oz. 1% fat cottage cheese
  • 1/4 tsp. pumpkin pie spice
  • 1 regular size egg
  • 1/3 cup fresh cranberries

DIRECTIONS

  1. Place slice of bread in a small baking dish
  2. Preheat oven to 350 F
  3. Blend remaining ingredients together until smooth
  4. Pour over “crust”
  5. Bake for 15 minutes or until solid
