17 Nov Spicy Cream of Broccoli Soup
If you love broccoli, but don’t want to drink watery green soup any more, this Spicy Broccoli Soup will be a welcome addition to your meal rotation. It’s creamy, vibrant, and flavorful. It’s elegant yet hearty and full of wonderful tastes: garlic, a hint of cayenne spice, nutmeg, and cream. A genuine winter comfort food favorite packed with 15 grams of protein!
Ingredients:
1 packet cream of broccoli soup mix (find it here)
¼ cup broccoli, cooked (to really bring out the flavor, try roasting it with olive oil until it is just slightly brown with caramelization!)
Dash of garlic powder
Dash of cayenne pepper
Nutmeg, to taste
Directions:
After roasting, purée broccoli in blender. Combine soup mix, water (per package directions), and spices in a small bowl. Stir in puréed broccoli. Heat on stovetop or microwave on medium heat (70%) for 60 seconds. Serve.
